This one bowl, easy to put together snacking cake is a favorite for breakfast or dessert, or any other time throughout the day.
What you will need:
- Mixing bowl
- 8 x 8 baking dish
Ingredients
- 8 tablespoons of butter, melted
- 2/3 cup of light brown sugar
- 2 teaspoons of vanilla extract
- 2 large eggs, at room temperature
- 1 cup of mashed bananas (about 2 – 3 very ripe bananas)
- 1 teaspoon of baking soda
- 1 teaspoon of cinnamon
- 1 1/2 cups + 2 tablespoons of all-purpose flour
- 1 cup of chocolate chips (I prefer a mixture of semi sweet and dark chocolate chips)
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line the 8×8 pan with parchment paper or grease using non-stick cooking spray, such as Pam. Set aside.
- In a large bowl, mix together the butter, brown sugar, and vanilla. Beat in the eggs one at a time.
- Mash the bananas into the butter and egg mixture until smooth. You can use a large fork to help with this mashing.
- In a separate bowl, combine 1 1/2 cups of flour, baking soda, and cinnamon.
- Add the flour mixture to the banana mixture.
- In a smaller bowl, lightly toss the chocolate chips with the remaining 2 tablespoons of flour.
- Gently fold chocolate chip mixture into the rest of the batter until combined.
- Pour batter into the prepared pan. Bake for 30-35 minutes, or until a knife or toothpick comes out clean.
- Cool for a little, slice into “snacking” pieces, and enjoy 🙂
Best to store in an airtight container or large Ziplock bag. Stays fresh for 5-7 days, if it lasts that long…
