chocolate chip banana snacking cake

This one bowl, easy to put together snacking cake is a favorite for breakfast or dessert, or any other time throughout the day.

What you will need:

  • Mixing bowl
  • 8 x 8 baking dish

Ingredients

  • 8 tablespoons of butter, melted
  • 2/3 cup of light brown sugar
  • 2 teaspoons of vanilla extract
  • 2 large eggs, at room temperature
  • 1 cup of mashed bananas (about 2 – 3 very ripe bananas)
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • 1 1/2 cups + 2 tablespoons of all-purpose flour
  • 1 cup of chocolate chips (I prefer a mixture of semi sweet and dark chocolate chips)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line the 8×8 pan with parchment paper or grease using non-stick cooking spray, such as Pam. Set aside.
  2. In a large bowl, mix together the butter, brown sugar, and vanilla. Beat in the eggs one at a time.
  3. Mash the bananas into the butter and egg mixture until smooth. You can use a large fork to help with this mashing.
  4. In a separate bowl, combine 1 1/2 cups of flour, baking soda, and cinnamon.
  5. Add the flour mixture to the banana mixture.
  6. In a smaller bowl, lightly toss the chocolate chips with the remaining 2 tablespoons of flour.
  7. Gently fold chocolate chip mixture into the rest of the batter until combined.
  8. Pour batter into the prepared pan. Bake for 30-35 minutes, or until a knife or toothpick comes out clean.
  9. Cool for a little, slice into “snacking” pieces, and enjoy 🙂

Best to store in an airtight container or large Ziplock bag. Stays fresh for 5-7 days, if it lasts that long…
